Why It’s Healthy:

Chickpeas are an excellent source of plant-based protein, while spinach provides fibre, iron, and vitamins, making this dish both filling and nutritious.

Ingredients:

  • 2 cups spinach, finely chopped
  • 1 cup boiled chickpeas
  • 1 medium onion, finely chopped
  • 1 medium tomato, pureed
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • ½ tsp turmeric powder
  • 1 tsp olive oil

Instructions:

  1. Sauté cumin, onions, and ginger-garlic paste in olive oil.
  2. Add tomatoes, turmeric, and chickpeas. Cook for 2-3 minutes.
  3. Mix in spinach, simmer for 5 minutes, and enjoy.

2. Methi Moong Dal (Fenugreek & Lentil Curry)

Instructions:

  1. Heat oil in a pan, sauté cumin seeds, garlic, and onion.
  2. Add fenugreek leaves and soaked moong dal. Cook for 10 minutes.
  3. Add turmeric, salt, and water. Simmer until dal softens.

Return the puree to the pan, season with sea salt and freshly ground pepper (As per the taste), and add the remaining soup. Cook until the whole puree is cooked through, about 5 mintutes. Garnish it with coriander and serve it hot.

  • 1 cup green peas (fresh or frozen)
  • ½ cup fresh mint leaves
  • 1 medium onion, chopped

Instructions:

  • 1/2 kgs Frozen Vegetables 
  • 100 Grams Mushrooms

  • Soya Sauce 
  • Ginger Garlic Paste

  • Black Pepper 
  • 1 Tsp Cornflour 
  • Chilli Flakes 
  • Sesame Seeds ( For Garnish )

Instructions:

  1. Microwave frozen vegetables for 2 minutes.
  2. Sauté mushrooms in mustard oil, then add onions, soya sauce, and spices.
  3. Toss in vegetables, add cornflour slurry, and cook for 2-3 minutes.
  4. Garnish with sesame seeds before serving.

5. Stuffed Capsicum with Mixed Beans & Paneer
